I wanted this wine to express the richness of our 45 years-old Grenache structured by our 60 years-old Bourboulenc. I also selected an exuberant Marsanne and a Roussanne with great aromatic finesse to create this perfumed, long and complex white wine. This is a cuvée I'm very proud of. Eric Fabre

The vines

Terroir

Hard limestone screes of the mountain of La Clape. Warm and dry climate tempered by the Mediterranean. Slow ripening thanks to cooler nights on the shores of the sea.

Growing

Sustainable practices according to ASCERT charter for respect of the environment and complexity of the wine: composted pomace amendment, crushed unwanted shoots, plowing, biodegredable sprays, no insecticides.

Varieties

Bourboulenc (40%), Grenache (20%), Roussanne (20%), Marsanne (20%). Bush (old vines) and cordon de Royat treillising, hard-pruned for strictly controlled yields of about 30 hl/ha.

The cellar

Harvest

Two-months-long crop according to maturity of each variety. Grapes are hand-picked and selected.

Vinification

Total de-stemming, slow pressing, juice is gravity-fed into vats, each variety is vinified separately. Cleaned from raw lees twice, fermentation in 1-2 years-old barrels in a traditional temperature-controlled cellar.

Ageing

Stirring on fine lees in barrels during 5-6 months. Natural static clarification by gravity, no fining nor filtrating.

The wine

Tasting notes

Limpid, pale yellow wine with golden highlights. Rich and complex nose, with a blend of white fruits and flowers, fresh and sweet spices and honey, nuts. Plentiful, structured and creamy mouth unveiling a lovely aromatic intensity. Long and fresh elegant finish.

Ageing potential

Fresh and fruity when young, gaining more complexity after 5-10 years. Potential of 15-20 years.

Food pairing

Drink as an aperitif with toasts. Perfect with fish, veal or poultry in sauce, as well as spicier dishes (curry, saffron). Excellent match with cured cheeses (époisse, roquefort, stilton).

Service

Serve at 10°C/45°F. If served too cold, the wine will no develop its full aroma.
